the Pallavicino’s old courtyard
(Polesine Parmense (PR) - Emilia Romagna)

Certainly to visit a castle, beyond cheering the mood, transports you back in the atmosphere of the past… but discovering in its dungeons one of the best products of our cookery it’s a breathtaking surprise.
At Polesine Parmense, a small village on the bank of the Po, intrigued by the usual tourist sign, we went to visit the “vecchia corte Pallavicina” (14th century, old customs house of the count Pallavicino to collect the toll on the salt).
Welcomed by a “gaily coloured gatekeeper” we entered the old courtyard and followed the guided tour.
After the rooms, we went down to the dungeons.
And here, quite overwhelmed by the scent in a surreal atmosphere, hanged on the ceiling and the walls there was not a chained captive but just the King of the hams the “Culatello”.
And more: not the excellent DOP but the even superior “Culatello del Consorzio” that here and in few other places is still produced by tradition.

We compliment the owners of the “vecchia corte” for having returned to the public the restored building maybe saving it from the ruin.
